Nanae Watabe has a special love for wild mushrooms.
Nanae is a citizen of the world. She is the daughter of a Japanese father and a Mexican mother. She grew up and was educated in Mexico City, but also because of her father's work she lived in Yokohama, Japan for a couple of years. She had the opportunity to travel to various parts of the world, with Mexico and Japan being her favorites.
She graduated from the University of British Columbia (UBC) in Vancouver with a degree in psychology with a focus on sociology. She subsequently completed a master's degree at the University of Gastronomic Sciences in Italy.
Her love for her home country brought her back to Mexico where she began this journey into the world of mushrooms and other projects that interest her. She has been very fortunate to participate in projects that have shaped her, such as managing an organic garden, assisting one of the best chefs in Mexico, starting a restaurant, guiding gastronomic and cultural tours, advising on culinary projects, as well as managing family businesses.
But all these experiences have forged what is now her passion, mushrooms. It all started with a basket of wild mushrooms from Andres, who is now her main bonguero. Today, one of her main activities are her tours in the forest, visited by chefs as well as her kitchens. She is a supplier to the best restaurants in Mexico City, such as Hugo, Pujol, Anónimo, Meroma, among others. Her new goal is to exalt Mexico through the fungi kingdom, and this book is the result of all this effort and the beginning of this new stage.
“…mushrooms became the gateway to a world where gastronomy is intertwined with history, ecology, and spirituality/” - Watabe, Nanae. (2024). Estado de Hongos. CDMX. 18pp.
